Boi mela 2008 gives you a picture of a phuchkawallah in apron and gloves serving phuchkas in crystal-clean plates covered with plastic sheets. Even the tamarind solution is being made from bottled water.Not only that,the role-man wears a cap, apron and gloves while making and handing out rolls and uses branded sauces. Snacking has taken a hygienic turn at the Salt Lake stadium grounds, thanks to a pilot project by Bidhannagar Municipality.Biswajiban Majumder,the chairman of the municipality informed that a health food consultant recently approached them to extend an offer to monitor the quality of street food in Salt Lake as part of a public-private partnership. They wished to make changes to roadside stalls in order to enable them to serve healthy fare.The organisation has taken up its first project at the book fair, which includes 55 food stalls serving jhalmuri to ice cream.Subha Bose, the owner of Bose & Bose Consultancy, which is monitoring the food being sold at Boi Mela is trying to inculcate a hygienic format for the stalls.Visitors at the fair are happy with the change.
